  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1 cup shredded Swiss cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

  • 1 cup shredded Swiss cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375 degrees F.
  • In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the mushrooms and garlic, and sauté until the mushrooms are tender. Remove from heat and let cool.
  • In a bowl, mix together the sautéed mushrooms, Swiss cheese, breadcrumbs, Parmesan cheese, parsley, and remaining olive oil. Season with salt and pepper.
  • Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • Stuff each chicken breast with the mushroom and cheese mixture, and secure with toothpicks if necessary.
  • Season the outside of the chicken breasts with salt and pepper.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
