Instructions

  • Preheat the broiler in your oven.
  • In a large bowl, whisk together 8 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until well combined. Set aside.
  • Heat 2 tablespoons of olive oil in a 10-inch ovenproof skillet over medium heat. Add 8 ounces of sliced mushrooms and 1 diced small onion. Cook, stirring occasionally, until the mushrooms are golden brown and the onion is softened, about 5-7 minutes.
  • Pour the egg mixture over the mushrooms and onions in the skillet. Cook, without stirring, for 4-5 minutes or until the edges are set but the center is still slightly runny.
  • Sprinkle 1 cup of shredded Swiss cheese evenly over the top of the frittata. Place the skillet under the broiler and broil for 2-3 minutes or until the top is set and golden brown.
  • Remove the skillet from the oven and drizzle 1 teaspoon of truffle oil over the frittata.
  • Let the frittata cool for a few minutes, then slice and serve. Enjoy!
