  • Season the mushrooms with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  • Push the mushrooms to one side of the skillet and pour the beaten eggs into the other side.
  • Scramble the eggs until cooked through, then mix them with the sautéed mushrooms.
  • Lay 2 slices of Swiss cheese on each flour tortilla.
  • Divide the scrambled eggs and mushrooms mixture between the two tortillas, placing it on top of the cheese slices.
  • Fold the sides of the tortillas over the filling, then roll them up into wraps.
  • Place the wraps back in the skillet over medium heat and cook for 1-2 minutes on each side, or until the cheese is melted and the tortillas are lightly browned.
