Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add 1 cup of sliced mushrooms to the skillet and sauté for 3-4 minutes until they start to brown.
  • Add 2 cups of fresh spinach to the skillet and cook for an additional 2-3 minutes until the spinach is wilted. Season with salt, pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of cumin. Remove from heat.
  • Place 1 large flour tortilla on a flat surface. Sprinkle 1/4 cup of shredded mozzarella cheese evenly over the tortilla.
  • Spread the mushroom and spinach mixture over the cheese, then sprinkle 1/2 cup of crumbled feta cheese on top.
  • Place the second tortilla on top to cover the filling.
  • Heat a clean skillet over medium heat and carefully transfer the assembled quesadilla to the skillet. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  • Remove from the skillet and let it cool for a minute before slicing into wedges.
  • Serve hot and enjoy!
