Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add 1/2 cup diced onion and sauté until translucent, about 3 minutes.
  • Add 1 cup sliced mushrooms and cook until they release their moisture and become golden brown, about 5 minutes.
  • Stir in 1 teaspoon minced garlic and 1/2 teaspoon cumin, and cook for an additional 1 minute.
  • Add 1 cup fresh spinach to the skillet and cook until wilted, about 2 minutes.
  • Season the mushroom and spinach mixture with salt and pepper to taste, then transfer it to a plate and set aside.
  • Wipe the skillet clean and return it to medium heat. Add 1/2 tablespoon of olive oil.
