- 4 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 1 cup shredded mozzarella cheese
- 1/4 cup breadcrumbs

- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together 1/4 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
- Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with 1/4 cup sliced mushrooms and 1/4 cup shredded mozzarella cheese, pressing the edges to seal the pocket.
- Brush each stuffed chicken breast with 2 tablespoons of olive oil, then coat with the breadcrumb mixture, pressing gently to adhere.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
