Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together 1/4 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
  • Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with 1/4 cup sliced mushrooms and 1/4 cup shredded mozzarella cheese, pressing the edges to seal the pocket.
  • Brush each stuffed chicken breast with 2 tablespoons of olive oil, then coat with the breadcrumb mixture, pressing gently to adhere.
