  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 4 ounces of goat cheese, crumbled
  • 2 tablespoons of fresh parsley, chopped

Instructions

  • Add the sliced mushrooms, dried thyme, salt, and black pepper to the skillet. Cook, stirring occasionally, until the mushrooms are tender and any liquid has evaporated, about 8-10 minutes. Remove from heat and let cool slightly.
  • Lay one sheet of filo pastry on a clean, dry surface and brush it lightly with melted butter. Place another sheet on top and brush with butter. Repeat with 2 more sheets, brushing each with butter.
  • Spread the mushroom mixture over the layered filo pastry, leaving a 1-inch border. Sprinkle the crumbled goat cheese and chopped parsley over the mushrooms.
  • Fold the edges of the filo pastry over the filling, creating a rustic, free-form pie. Brush the edges with any remaining melted butter.
  • Carefully transfer the pie to a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the filo pastry is golden brown and crispy.
