Mushroom and Goat Cheese Filo Pie
Created by: Howcan Team
Ingredients
- 8 sheets of filo pastry
- 1/4 cup of unsalted butter, melted
- 1 tablespoon of olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 pound of mushrooms, sliced
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 ounces of goat cheese, crumbled
- 2 tablespoons of fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
- Add the sliced mushrooms, dried thyme, salt, and black pepper to the skillet. Cook, stirring occasionally, until the mushrooms are tender and any liquid has evaporated, about 8-10 minutes. Remove from heat and let cool slightly.
- Lay one sheet of filo pastry on a clean, dry surface and brush it lightly with melted butter. Place another sheet on top and brush with butter. Repeat with 2 more sheets, brushing each with butter.
- Spread the mushroom mixture over the layered filo pastry, leaving a 1-inch border. Sprinkle the crumbled goat cheese and chopped parsley over the mushrooms.
- Fold the edges of the filo pastry over the filling, creating a rustic, free-form pie. Brush the edges with any remaining melted butter.
- Carefully transfer the pie to a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the filo pastry is golden brown and crispy.
- Remove from the oven and let the pie cool for a few minutes before slicing and serving. Enjoy!
