Instructions

  • In a skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add 1 cup of sliced mushrooms and 1/2 cup of diced onions to the skillet. Sauté for 5 minutes, or until the mushrooms are golden brown and the onions are translucent.
  • Season the mushrooms and onions with 1/2 teaspoon of cumin, 1/2 teaspoon of paprika, and salt and pepper to taste. Stir to combine and remove from heat.
  • Place 1 large flour tortilla on a flat surface. Sprinkle 1/2 cup of shredded cheese evenly over the tortilla.
  • Spread the sautéed mushrooms and onions over the cheese, then sprinkle the remaining 1/2 cup of shredded cheese on top.
  • Place the second large flour tortilla on top to cover the filling, pressing down gently.
  • Heat a clean skillet over medium heat. Carefully transfer the assembled quesadilla to the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Remove the quesadilla from the skillet and let it cool for a minute before slicing it into wedges.
