Instructions

  • In a small bowl, combine 1 1/2 cups warm water, 1 packet of active dry yeast, and 1 teaspoon of sugar. Let it sit for 5 minutes until foamy.
  • In a large mixing bowl, combine 4 cups of all-purpose flour and the yeast mixture. Mix until a dough forms.
  • Turn the dough out onto a floured surface and knead for 5 minutes. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour.
  • Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Punch down the dough and divide it into small pieces. Flatten each piece and place a small amount of shredded mozzarella in the center. Fold the dough around the cheese, forming a ball.
  • In a large pot, bring 10 cups of water and 1/2 cup of baking soda to a boil. Boil the pretzel bites in batches for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
  • Brush the pretzel bites with beaten egg and sprinkle with coarse salt.
  • Bake for 12-15 minutes, or until golden brown.
