Instructions

  • Preheat the oven to 375 degrees F.
  • Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • In a small bowl, mix together 1 cup of shredded mozzarella cheese, 1/4 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Stuff each chicken breast with the cheese mixture, dividing it evenly among the 4 breasts and pressing the edges to seal.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the stuffed chicken breasts and cook for 3-4 minutes on each side, or until golden brown.
  • Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let the chicken rest for 5 minutes before serving. Enjoy!
