Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until no longer pink, about 5-7 minutes.
  • Add the diced onion, minced garlic, Italian seasoning, salt, and black pepper to the skillet. Cook for an additional 3-4 minutes until the onions are soft and fragrant.
  • Stir in the marinara sauce and 1 cup of shredded mozzarella cheese. Cook for 2-3 minutes until the cheese is melted and the mixture is well combined.
  • Spoon the chicken and cheese mixture into the prepared bell peppers, dividing it evenly among them.
  • Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top of the stuffed peppers.
  • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  • Remove the foil and bake for an additional 5 minutes to brown the cheese.
  • Garnish with fresh basil leaves before serving. Enjoy!
