Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together the shredded mozzarella cheese, chopped sun-dried tomatoes, garlic powder, and dried oregano.
  • Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • Stuff each chicken breast with the mozzarella and sun-dried tomato mixture, dividing it evenly among the 4 breasts.
  • Season the stuffed chicken breasts with salt and pepper.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
