  • In a bowl, mix together 1 cup of chopped spinach, 1 cup of shredded mozzarella cheese, 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Cut a pocket into each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the spinach and mozzarella mixture, dividing it evenly among the 4 breasts.
  • Secure the pockets with toothpicks to keep the filling inside.
  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
  • Sear the stuffed chicken breasts for 3-4 minutes on each side, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove the toothpicks before serving.
