- 4 boneless, skinless chicken breasts

Instructions

- Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
- In a small bowl, mix together 1 cup of shredded mozzarella cheese and 1/2 cup of pesto sauce.
- Stuff each chicken breast with the mozzarella and pesto mixture, dividing it evenly among the 4 breasts. Secure the openings with toothpicks if necessary.
- Season the stuffed chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and cook for 3-4 minutes on each side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
