Ingredients
- 1 cup dried red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Cook for 5-7 minutes until the vegetables are softened.
- Add the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper to the pot. Stir and cook for 1-2 minutes to toast the spices.
- Pour in the diced tomatoes and vegetable broth. Add the rinsed red lentils to the pot. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
- Taste and adjust the seasoning if needed.
