  • 1 tablespoon of olive oil
  • 1/2 cup of onion, diced
  • 2 cloves of garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 cup of mixed cheese (such as cheddar, Monterey Jack, and queso fresco), shredded
  • 1/2 cup of Mexican chorizo, cooked and crumbled
  • 1/4 cup of fresh cilantro, chopped
  • 1/4 teaspoon of ground cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  • In a skillet, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced jalapeno. Cook until the onion is translucent, about 3-4 minutes.
  • Add the cooked black beans to the skillet and season with ground cumin, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes. Remove from heat and set aside.
  • In a small cast-iron skillet or oven-safe dish, spread the cooked black beans in an even layer at the bottom.
  • Sprinkle half of the shredded mixed cheese over the black beans, then top with the cooked and crumbled chorizo.
  • Add the remaining shredded mixed cheese on top of the chorizo, creating an even layer.
  • Place the skillet or dish in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
  • Once the queso fundido is hot and bubbly, remove it from the oven and sprinkle with chopped cilantro.
  • Serve immediately with tortilla chips for dipping.
