Instructions

  • In a large bowl, whisk together 1 1/2 cups of flour, 1/2 cup of rolled oats, 2 tablespoons of sugar, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  • In a separate bowl, whisk together 1 1/4 cups of buttermilk, 2 large eggs, and 1/4 cup of melted unsalted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in 1 cup of mixed berries.
  • Heat a non-stick griddle or skillet over medium heat and lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
