Ingredients
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons sugar
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a blender, combine 1 cup of flour, 2 eggs, 1/2 cup of milk, 1/2 cup of water, 1/4 teaspoon of salt, and 2 tablespoons of melted butter. Blend until smooth.
- Heat a lightly oiled non-stick pan over medium heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
- In a small bowl, mix the mixed berries with 2 tablespoons of sugar. Set aside.
- In a separate bowl, whip 1 cup of heavy cream with 1 tablespoon of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. Set aside.
- To assemble, place a spoonful of the mixed berries in the center of each crepe, fold the sides over the filling, and top with a dollop of whipped cream.
- Serve immediately and enjoy!
