Instructions

  • In a blender, combine 1 cup of flour, 2 eggs, 1/2 cup of milk, 1/2 cup of water, 1/4 teaspoon of salt, and 2 tablespoons of melted butter. Blend until smooth.
  • Heat a lightly oiled non-stick pan over medium heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
  • In a small bowl, mix the mixed berries with 2 tablespoons of sugar. Set aside.
  • In a separate bowl, whip 1 cup of heavy cream with 1 tablespoon of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. Set aside.
  • To assemble, place a spoonful of the mixed berries in the center of each crepe, fold the sides over the filling, and top with a dollop of whipped cream.
  • Serve immediately and enjoy!
