Mixed Berry Crepes with Whipped Cream
Created by: Howcan Team
Ingredients
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons sugar
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a blender, combine 1 cup of flour, 2 eggs, 1/2 cup of milk, 1/2 cup of water, 1/4 teaspoon of salt, and 2 tablespoons of melted butter. Blend until smooth.
- Heat a lightly oiled non-stick pan over medium heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
- In a small bowl, mix the mixed berries with 2 tablespoons of sugar. Set aside.
- In a separate bowl, whip 1 cup of heavy cream with 1 tablespoon of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. Set aside.
- To assemble, place a spoonful of the mixed berries in the center of each crepe, fold the sides over the filling, and top with a dollop of whipped cream.
- Serve immediately and enjoy!
Mixed Berry Crepes with a dollop of whipped cream have a rich history dating back to 13th century France. This delectable dish gained popularity in the Brittany region, where skilled chefs perfected the art of creating delicate, thin crepes filled with a luscious mixture of fresh mixed berries. The addition of a velvety dollop of whipped cream adds a delightful contrast to the tartness of the berries. Today, this delightful treat can be found in charming cafes throughout France, particularly in Paris and the picturesque countryside. For the best version of this dish, sourcing high-quality, seasonal berries and mastering the technique of creating paper-thin crepes are essential. Alternatively, some chefs opt for a more rustic approach, serving the mixed berry filling atop a stack of fluffy pancakes for a delightful twist on this classic dish.
