Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup white miso paste
- 2 tablespoons mirin
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon sesame oil
- 1 pound mixed vegetables (such as bell peppers, zucchini, and red onion), cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sesame seeds and sliced green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together 1/4 cup white miso paste, 2 tablespoons mirin, 2 tablespoons soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, minced garlic, and grated ginger to make the miso glaze.
- Place the salmon fillets on the prepared baking sheet and brush the miso glaze over the top of each fillet. Set aside.
- In a large bowl, toss the mixed vegetables with 2 tablespoons of olive oil, salt, and pepper. Spread the vegetables in a single layer on another baking sheet.
- Place both the salmon and vegetables in the preheated oven. Roast the vegetables for 20-25 minutes, or until they are tender and slightly caramelized. Roast the salmon for 12-15 minutes, or until it is cooked through and the glaze is caramelized.
- Remove the salmon and vegetables from the oven. Sprinkle the roasted vegetables with sesame seeds and sliced green onions for garnish.
