Instructions

  • In a small saucepan, combine 1/4 cup white miso paste, 2 tablespoons mirin, 2 tablespoons sake, 2 tablespoons sugar, 1 tablespoon soy sauce, and 1 teaspoon grated ginger. Cook over low heat, stirring constantly, until the sugar is dissolved and the mixture is smooth. Remove from heat and let it cool.
  • Place the cod fillets in a shallow dish and pour the miso glaze over them, turning to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  • Preheat the broiler. Line a baking sheet with aluminum foil and brush with 1 tablespoon of vegetable oil.
  • Remove the cod fillets from the marinade and place them on the prepared baking sheet. Sprinkle with 1 teaspoon of sesame seeds.
  • Broil the cod for 8-10 minutes, or until the fish is opaque and flakes easily with a fork, basting with the remaining miso glaze halfway through cooking.
  • Serve the miso glazed cod hot, garnished with additional sesame seeds and sliced green onions, if desired. Enjoy!
