Ingredients
- 8 lamb loin chops
- 1 cup fresh mint leaves, chopped
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together 1 cup of chopped mint leaves, 1/2 cup of breadcrumbs, 2 cloves of minced garlic, 1 teaspoon of lemon zest, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Rub the lamb chops with 2 tablespoons of olive oil, then press the mint mixture onto both sides of each chop to coat evenly.
- Place the lamb chops on a baking sheet and bake for 12-15 minutes for medium-rare, or until desired doneness is reached.
