- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup small pasta (such as ditalini or elbow macaroni)
- 4 boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the grill to medium-high heat.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Cook for 5-7 minutes until the vegetables are softened.
- Stir in the diced tomatoes, vegetable broth, kidney beans, diced zucchini, green beans, dried oregano, dried basil, dried thyme, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Meanwhile, season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for a few minutes before slicing.
- Add the small pasta to the soup and cook for an additional 10 minutes, or until the pasta is tender.
- Serve the minestrone soup hot, with the grilled chicken slices on the side. Enjoy!
