  • Poke the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes, or until tender.
  • In a large bowl, mix together the black beans, corn, red bell pepper, red onion, jalapeno, cumin, chili powder, garlic powder, salt, and black pepper.
  • Once the sweet potatoes are cooked, slice them open and fluff the insides with a fork. Spoon the bean and vegetable mixture into the sweet potatoes.
