Ingredients
- 4 medium sweet potatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/2 cup diced red onion
- 1 jalapeno, seeded and diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- Sour cream, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Poke the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes, or until tender.
- In a large bowl, mix together the black beans, corn, red bell pepper, red onion, jalapeno, cumin, chili powder, garlic powder, salt, and black pepper.
- Once the sweet potatoes are cooked, slice them open and fluff the insides with a fork. Spoon the bean and vegetable mixture into the sweet potatoes.
- Top each sweet potato with shredded cheddar cheese and return to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with chopped cilantro. Serve with sliced avocado and a dollop of sour cream on top.
