- 1 pound ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (14.5 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 cup shredded cheddar cheese
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup white sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 eggs
Instructions
- Preheat the oven to 400 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground beef, 1 chopped onion, and 1 chopped red bell pepper over medium heat until the beef is no longer pink. Drain any excess grease.

- Pour the cornbread batter over the beef and cheese mixture in the baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
- Allow the casserole to cool for 5 minutes before serving. Enjoy!
Mexican Cornbread Casserole is a beloved dish that combines the flavors of traditional Mexican cuisine with the comforting elements of cornbread. This hearty casserole typically features a layer of seasoned ground beef, beans, corn, and peppers, topped with a layer of cornbread batter and baked to golden perfection. The dish has its roots in the American Southwest, where it has been a staple in home kitchens and potlucks for generations. Some chefs add a spicy kick with jalapeños or a layer of melted cheese for extra indulgence. For the best version of this dish, head to Texas or New Mexico, where it's a popular menu item in many local restaurants. The key to a successful Mexican Cornbread Casserole lies in the balance of flavors and textures, so getting the seasoning just right and achieving a moist, but not soggy, cornbread layer is crucial. For a twist on the classic recipe, some cooks substitute the ground beef with shredded chicken or turkey for a lighter alternative.
