- 1 pound ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped

- 1 cup all-purpose flour
- 1/4 cup white sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 eggs
Instructions
- Preheat the oven to 400 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground beef, 1 chopped onion, and 1 chopped red bell pepper over medium heat until the beef is no longer pink. Drain any excess grease.
- Stir in the drained diced tomatoes, drained corn, and diced green chilies. Cook for an additional 5 minutes, then spread the mixture into the prepared baking dish.
- Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
