Ingredients
- 1 pound of boneless, skinless chicken breasts
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 4 whole wheat or spinach wraps
- 1 cup of hummus
- 1 cup of diced tomatoes
- 1 cup of diced cucumbers
- 1/2 cup of crumbled feta cheese
- 1/4 cup of chopped fresh parsley
- 1/4 cup of sliced red onion
- 1/4 cup of Kalamata olives, sliced
Instructions
- Preheat a grill or grill pan over medium-high heat.
- In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
- Brush the chicken breasts with the olive oil mixture and grill for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for 5 minutes before slicing into strips.
- Warm the wraps in the microwave for 10-15 seconds to make them more pliable.
- Spread 1/4 cup of hummus onto each wrap, leaving a border around the edges.
- Divide the grilled chicken slices, diced tomatoes, diced cucumbers, crumbled feta cheese, chopped parsley, sliced red onion, and Kalamata olives evenly among the wraps.
- Fold in the sides of the wraps and then roll them up tightly, tucking in the filling as you go.
- Slice the wraps in half diagonally and serve immediately. Enjoy!
