Ingredients
- 2 large whole wheat tortillas
- 1/2 cup hummus
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup sliced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced Kalamata olives
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a small bowl, mix together 1 tablespoon of olive oil, 1 tablespoon of lemon juice, and a pinch of salt and pepper.
- Lay out the whole wheat tortillas and spread 1/4 cup of hummus on each tortilla, leaving a border around the edges.
- Divide the diced cucumber, diced tomatoes, sliced red onion, crumbled feta cheese, sliced Kalamata olives, and chopped fresh parsley evenly between the two tortillas, placing the ingredients in the center of each tortilla.
- Drizzle the olive oil and lemon juice mixture over the ingredients on each tortilla.
- Fold the sides of the tortillas in and then roll them up tightly, tucking in the ingredients as you go.
- Heat a large skillet over medium heat and place the wraps seam-side down in the skillet. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy.
- Remove from the skillet and let them cool for a minute before slicing each wrap in half diagonally.
