Instructions

  • Divide the diced cucumber, diced tomatoes, sliced red onion, crumbled feta cheese, sliced Kalamata olives, and chopped fresh parsley evenly between the two tortillas, placing the ingredients in the center of each tortilla.
  • Drizzle the olive oil and lemon juice mixture over the ingredients on each tortilla.
  • Fold the sides of the tortillas in and then roll them up tightly, tucking in the ingredients as you go.
  • Heat a large skillet over medium heat and place the wraps seam-side down in the skillet. Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy.
  • Remove from the skillet and let them cool for a minute before slicing each wrap in half diagonally.
