Instructions

  • Lay the whole wheat tortillas on a clean surface.
  • Spread 1/4 cup of hummus on each tortilla, leaving a 1-inch border around the edges.
  • Divide the mixed greens, sliced cucumber, sliced red bell pepper, sliced red onion, and kalamata olives evenly between the two tortillas, arranging the ingredients in a line down the center of each tortilla.
  • Sprinkle 2 tablespoons of crumbled feta cheese over the veggies on each tortilla.
  • Drizzle 1 tablespoon of balsamic vinaigrette over the fillings on each tortilla.
  • Fold the sides of each tortilla towards the center, then roll up tightly from the bottom to enclose the fillings and form a wrap.
