Ingredients
- 2 large whole wheat tortillas
- 1/2 cup hummus
- 1 cup mixed greens
- 1/2 cup sliced cucumber
- 1/2 cup sliced red bell pepper
- 1/4 cup sliced red onion
- 1/4 cup kalamata olives
- 1/4 cup crumbled feta cheese
- 2 tablespoons balsamic vinaigrette
Instructions
- Lay the whole wheat tortillas on a clean surface.
- Spread 1/4 cup of hummus on each tortilla, leaving a 1-inch border around the edges.
- Divide the mixed greens, sliced cucumber, sliced red bell pepper, sliced red onion, and kalamata olives evenly between the two tortillas, arranging the ingredients in a line down the center of each tortilla.
- Sprinkle 2 tablespoons of crumbled feta cheese over the veggies on each tortilla.
- Drizzle 1 tablespoon of balsamic vinaigrette over the fillings on each tortilla.
- Fold the sides of each tortilla towards the center, then roll up tightly from the bottom to enclose the fillings and form a wrap.
- Slice each wrap in half diagonally and serve immediately, or wrap in foil for an on-the-go meal.
