  • Salt and pepper to taste

Instructions

  • Lay out the whole wheat tortillas on a clean surface.
  • Spread 1/4 cup of hummus onto each tortilla, leaving a 1-inch border around the edges.
  • Evenly distribute the mixed greens, sliced cucumber, sliced red bell pepper, sliced red onion, crumbled feta cheese, pitted kalamata olives, and chopped fresh parsley on top of the hummus on each tortilla.
  • Drizzle 1 tablespoon of extra virgin olive oil and 1/2 tablespoon of red wine vinegar over the veggie filling on each tortilla.
  • Season with salt and pepper to taste.
  • Fold in the sides of the tortilla and then roll it up tightly, starting from the bottom, to create a wrap.
  • Slice the wraps in half diagonally and serve immediately, or wrap in parchment paper and refrigerate until ready to eat.
