Ingredients
- 1 tablespoon olive oil
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 4 large eggs
- 1/4 cup crumbled feta cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
- Add 1/2 diced red onion and sauté for 2 minutes until softened.
- Add 1 diced red bell pepper and 1 diced zucchini to the skillet, and cook for 3-4 minutes until the vegetables are tender.
- Stir in 1 cup of halved cherry tomatoes and cook for an additional 2 minutes.
- In a bowl, whisk together 4 large eggs, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Pour the egg mixture over the cooked vegetables in the skillet and gently stir to combine.
- Cook for 3-4 minutes, stirring occasionally, until the eggs are set but still moist.
- Sprinkle 1/4 cup of crumbled feta cheese over the top of the scramble and let it melt slightly.
- Garnish with 2 tablespoons of chopped fresh parsley before serving.
