Instructions

  • In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add 1/2 diced red onion and sauté for 2 minutes until softened.
  • Add 1 diced red bell pepper and 1 diced zucchini to the skillet, and cook for 3-4 minutes until the vegetables are tender.
  • Stir in 1 cup of halved cherry tomatoes and cook for an additional 2 minutes.
  • In a bowl, whisk together 4 large eggs, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Pour the egg mixture over the cooked vegetables in the skillet and gently stir to combine.
  • Cook for 3-4 minutes, stirring occasionally, until the eggs are set but still moist.
  • Sprinkle 1/4 cup of crumbled feta cheese over the top of the scramble and let it melt slightly.
  • Garnish with 2 tablespoons of chopped fresh parsley before serving.
