Ingredients
- 8 oz of linguine pasta
- 1 lb of large shrimp, peeled and deveined
- 1/4 cup of sun-dried tomatoes, chopped
- 3 cloves of garlic, minced
- 1/4 cup of extra virgin olive oil
- 1/2 cup of white wine
- 1/4 cup of fresh parsley, chopped
- 1/4 teaspoon of red pepper flakes
- Salt and black pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the linguine pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the white wine and sun-dried tomatoes. Cook for 2-3 minutes, allowing the wine to reduce slightly and the tomatoes to soften.
- Return the cooked shrimp to the skillet and toss to combine with the sun-dried tomatoes and wine mixture.
- Add the cooked linguine to the skillet and toss to coat the pasta with the shrimp and sun-dried tomato mixture. If needed, drizzle with a little more olive oil to prevent sticking.
- Season with salt and black pepper to taste, and sprinkle with chopped parsley.
