Ingredients
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer. In a medium saucepan, combine 1 cup of quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and transfer to a large bowl to cool.
- Preheat grill to medium-high heat.
- In a small bowl, whisk together balsamic vinegar, olive oil, dried oregano, salt, and black pepper. Set aside.
- Place the sliced bell peppers, zucchini, and red onion on the grill. Brush the vegetables with the balsamic glaze and grill for 3-4 minutes on each side, or until they have grill marks and are tender. Remove from the grill and let them cool slightly.
- Add the grilled vegetables to the bowl with quinoa. Drizzle the remaining balsamic glaze over the salad and toss to combine.
- Sprinkle crumbled feta cheese and chopped parsley over the salad before serving.
