Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer. In a medium saucepan, combine 1 cup of quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and transfer to a large bowl to cool.
  • Preheat grill to medium-high heat.
  • In a small bowl, whisk together balsamic vinegar, olive oil, dried oregano, salt, and black pepper. Set aside.
  • Place the sliced bell peppers, zucchini, and red onion on the grill. Brush the vegetables with the balsamic glaze and grill for 3-4 minutes on each side, or until they have grill marks and are tender. Remove from the grill and let them cool slightly.
  • Add the grilled vegetables to the bowl with quinoa. Drizzle the remaining balsamic glaze over the salad and toss to combine.
  • Sprinkle crumbled feta cheese and chopped parsley over the salad before serving.
