Instructions

  • In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.
  • Divide the quinoa mixture into serving bowls and top with crumbled feta cheese.
  • Serve immediately and enjoy!
