Instructions

  • Cook the orzo pasta according to the package instructions. Drain and rinse with cold water. Set aside to cool.
  • In a large mixing bowl, combine the cooked orzo, red onion, cucumber, cherry tomatoes, Kalamata olives, and parsley.
  • In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper.
