Ingredients
- 1 cup orzo pasta
- 1/4 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to the package instructions. Drain and rinse with cold water. Set aside to cool.
- In a large mixing bowl, combine the cooked orzo, red onion, cucumber, cherry tomatoes, Kalamata olives, and parsley.
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the orzo salad and toss to combine.
- Gently fold in the crumbled feta cheese.
- Refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
