Instructions

  • Lay the whole wheat tortillas on a clean work surface.
  • Spread 1/2 cup of spicy harissa hummus evenly over each tortilla, leaving a small border around the edges.
  • Divide the mixed salad greens, sliced cucumber, sliced red bell pepper, crumbled feta cheese, sliced Kalamata olives, and chopped fresh parsley evenly between the two tortillas, arranging the ingredients in a line down the center of each tortilla.
  • Season the fillings with salt and pepper to taste.
  • Fold the bottom edge of each tortilla up over the fillings, then fold in the sides, and roll tightly to enclose the fillings and form a wrap.
