Ingredients
- 1 cup spicy harissa hummus
- 2 large whole wheat tortillas
- 1 cup mixed salad greens
- 1/2 cup sliced cucumber
- 1/2 cup sliced red bell pepper
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced Kalamata olives
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Lay the whole wheat tortillas on a clean work surface.
- Spread 1/2 cup of spicy harissa hummus evenly over each tortilla, leaving a small border around the edges.
- Divide the mixed salad greens, sliced cucumber, sliced red bell pepper, crumbled feta cheese, sliced Kalamata olives, and chopped fresh parsley evenly between the two tortillas, arranging the ingredients in a line down the center of each tortilla.
- Season the fillings with salt and pepper to taste.
