  • 2 cups vegetable broth
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme

  • 1/4 tsp black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • 1 lemon, cut into wedges

  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • Preheat the grill to medium-high heat.
  • In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
  • Brush the salmon fillets with the olive oil mixture and place them on the grill. Cook for 4-5 minutes per side, or until the salmon is cooked through and has grill marks. Remove from the grill and set aside.
  • In a large bowl, combine the cooked quinoa, cherry tomatoes, Kalamata olives, crumbled feta cheese, and fresh parsley. Toss to combine.
  • Divide the quinoa mixture among 4 plates and top each with a grilled salmon fillet. Serve with lemon wedges on the side.
