Instructions

  • In a large salad bowl, combine 2 large chopped tomatoes, 1 diced cucumber, 1 thinly sliced red onion, and 1 chopped green bell pepper.
  • Add 1/2 cup of pitted Kalamata olives and 4 ounces of crumbled feta cheese to the bowl.
  • In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and salt and pepper to taste.
