Ingredients
- 2 large tomatoes, chopped
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 green bell pepper, chopped
- 1/2 cup Kalamata olives, pitted
- 4 ounces feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine 2 large chopped tomatoes, 1 diced cucumber, 1 thinly sliced red onion, and 1 chopped green bell pepper.
- Add 1/2 cup of pitted Kalamata olives and 4 ounces of crumbled feta cheese to the bowl.
- In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and salt and pepper to taste.
- Pour the vinaigrette over the salad and toss gently to coat all the ingredients.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld before serving.
