Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 1/2 cup pitted Kalamata olives
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper, and cook for another 2 minutes.
- Add the ground cumin, paprika, dried oregano, and cayenne pepper, and cook for 1 minute to toast the spices.
- Pour in the drained and rinsed chickpeas, diced tomatoes, and vegetable broth. Bring the stew to a simmer.
- Reduce the heat to low, cover the pot, and let the stew simmer for 20 minutes, stirring occasionally.
- Stir in the pitted Kalamata olives and season with salt and pepper to taste.
- Simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve the Mediterranean Chickpea Stew hot, garnished with fresh parsley.
