  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1/2 cup pitted Kalamata olives
  • Salt and pepper to taste
  • Fresh parsley for garnish
