  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup farro
  • 2 cups chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
  • Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
  • Add the farro to the skillet and toast for 2-3 minutes, stirring occasionally.
  • Pour in the chicken broth and bring to a boil. Reduce heat to a simmer, cover, and cook for 15-20 minutes, or until the farro is tender and most of the liquid is absorbed.
  • Stir in the sun-dried tomatoes, olives, dried oregano, and dried thyme. Cook for an additional 2-3 minutes.
  • Add the cooked chicken back to the skillet and stir to combine. Cook for another 2-3 minutes to heat the chicken through.
  • Season with salt and pepper to taste.
  • Sprinkle the crumbled feta cheese and chopped parsley over the skillet before serving.
  • Serve hot and enjoy!
