  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  • In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Fluff with a fork and set aside.
  • In a small bowl, mix together the olive oil, oregano, thyme, garlic powder, salt, and pepper. Rub the chicken breasts with the spice mixture.
  • Heat a grill pan or skillet over medium-high heat. Add the chicken and cook for 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.
  • To assemble the bowls, divide the cooked quinoa among 4 serving bowls. Top with sliced grilled chicken, diced cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.
