Mediterranean Baked Salmon with Quinoa

Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup quinoa
- 2 cups vegetable broth
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup sliced Kalamata olives
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water and drain well.
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and stir in the chopped parsley, sun-dried tomatoes, and Kalamata olives. Set aside.
- In a small bowl, mix together the olive oil, minced garlic, dried oregano, salt, and black pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the olive oil mixture over the salmon fillets. Place a slice of lemon on top of each fillet.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
- Serve the baked salmon over the Mediterranean quinoa mixture. Enjoy!
