  • 1 lemon, sliced

Instructions

  • Preheat the oven to 400°F (200°C).
  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and stir in the chopped parsley, sun-dried tomatoes, and Kalamata olives. Set aside.
  • In a small bowl, mix together the olive oil, minced garlic, dried oregano, salt, and black pepper.
  • Place the salmon fillets on a baking sheet lined with parchment paper. Brush the olive oil mixture over the salmon fillets. Place a slice of lemon on top of each fillet.
  • Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
