Ingredients
- 4 cod fillets (6 oz each)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup couscous
- 1 1/4 cups chicken or vegetable broth
- 1/4 cup chopped fresh parsley
- 1 lemon, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup of olive oil, 2 cloves of minced garlic, 1 teaspoon of dried oregano, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Place the cod fillets in a baking dish and brush the olive oil mixture over the fillets.
- Arrange lemon slices on top of the fillets.
- Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- While the cod is baking, prepare the couscous according to package instructions, using 1 1/4 cups of chicken or vegetable broth instead of water.
- Fluff the cooked couscous with a fork and stir in 1/4 cup of chopped fresh parsley.
- Serve the baked cod over a bed of couscous, garnished with additional lemon slices and a sprinkle of fresh parsley. Enjoy!
