Ingredients
- 12 oz of spaghetti
- 4 ripe tomatoes, diced
- 2 cloves of garlic, minced
- 1/4 cup of extra virgin olive oil
- 1/2 cup of fresh basil leaves, chopped
- 8 oz of fresh mozzarella, diced
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they start to soften.
- Add the cooked spaghetti to the skillet and toss to combine with the tomatoes and garlic. Cook for an additional 2-3 minutes to heat through.
- Remove the skillet from the heat and stir in the chopped basil and diced mozzarella. Season with salt and pepper to taste.
- Divide the pasta among serving plates and top with grated Parmesan cheese. Serve immediately and enjoy!
