  • 1 lime, juiced
  • 1 tsp of chili powder
  • 1/2 tsp of cumin
  • Salt and pepper to taste
  • 8 small flour tortillas

Instructions

  • Preheat grill to medium-high heat.
  • In a medium bowl, combine the shrimp, olive oil, chili powder, cumin, salt, and pepper. Toss to coat the shrimp evenly.
  • Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
  • In a separate bowl, combine the diced mango, grilled pineapple, red onion, cilantro, jalapeno, and lime juice. Toss to mix well and set aside.
  • Warm the tortillas on the grill for about 30 seconds on each side.
  • To assemble the tacos, place a few shrimp on each tortilla and top with the mango-pineapple salsa.
  • Serve immediately and enjoy!
