Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 ripe mangoes, peeled and diced
- 2 limes, juiced and zested
- 3 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine the diced mangoes, lime juice, lime zest, olive oil, minced garlic, paprika, cayenne pepper, salt, and pepper. Mix well to make the marinade.
- Add the peeled and deveined shrimp to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers, if using wooden skewers, make sure to soak them in water for 30 minutes before threading the shrimp.
