Ingredients
- 2 cups cooked jasmine rice, cooled
- 1 ripe mango, diced
- 1/2 cup frozen peas, thawed
- 1/2 cup carrots, diced
- 1/2 cup red bell pepper, diced
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and cook for 1 minute until fragrant.
- Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the garlic.
- Add diced carrots, red bell pepper, and peas to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Add the cooled jasmine rice to the skillet and stir to combine with the vegetables.
- Pour in the soy sauce, sesame oil, and red pepper flakes (if using). Stir-fry for another 2-3 minutes until the rice is heated through and well-coated with the sauce.
- Add the diced mango and chopped green onions to the skillet. Gently toss to mix with the rice and cook for an additional 1-2 minutes.
- Season with salt and pepper to taste.
- Remove from heat and serve the mango fried rice hot. Enjoy!
