  • 1/2 cup frozen peas, thawed
  • 1/2 cup carrots, diced
  • 1/2 cup red bell pepper, diced

  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon red pepper flakes (optional)

  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the garlic.
  • Add diced carrots, red bell pepper, and peas to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  • Add the cooled jasmine rice to the skillet and stir to combine with the vegetables.
  • Pour in the soy sauce, sesame oil, and red pepper flakes (if using). Stir-fry for another 2-3 minutes until the rice is heated through and well-coated with the sauce.
  • Add the diced mango and chopped green onions to the skillet. Gently toss to mix with the rice and cook for an additional 1-2 minutes.
  • Season with salt and pepper to taste.
