Ingredients
- 4 boneless, skinless chicken breasts
- 2 ripe mangoes, peeled and diced
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Cooked rice (optional, for serving)
Instructions
- In a small bowl, whisk together 1/4 cup soy sauce, 1/4 cup honey, 2 tablespoons rice vinegar, 2 cloves minced garlic, 1 teaspoon grated ginger, and 1/2 teaspoon red pepper flakes. Set aside.
- Season the chicken breasts with salt and pepper on both sides.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced mangoes and sauté for 2-3 minutes until slightly softened.
- Pour the prepared sauce over the mangoes in the skillet and stir to combine. Let it simmer for 2-3 minutes.
- Return the cooked chicken to the skillet, spooning the mango sauce over the chicken. Let it simmer for an additional 2-3 minutes to allow the flavors to meld together.
- Garnish with sliced green onions and serve the mango chicken over cooked rice, if desired.
