Instructions

  • Season the chicken breasts with salt and pepper on both sides.
  • Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the diced mangoes and sauté for 2-3 minutes until slightly softened.
  • Pour the prepared sauce over the mangoes in the skillet and stir to combine. Let it simmer for 2-3 minutes.
  • Return the cooked chicken to the skillet, spooning the mango sauce over the chicken. Let it simmer for an additional 2-3 minutes to allow the flavors to meld together.
