Created by: Howcan Team
Ingredients
- 4 boneless, skinless chicken breasts
- 2 ripe mangoes, peeled and diced
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Cooked rice (optional, for serving)
Instructions
- In a small bowl, whisk together 1/4 cup soy sauce, 1/4 cup honey, 2 tablespoons rice vinegar, 2 cloves minced garlic, 1 teaspoon grated ginger, and 1/2 teaspoon red pepper flakes. Set aside.
- Season the chicken breasts with salt and pepper on both sides.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced mangoes and sauté for 2-3 minutes until slightly softened.
- Pour the prepared sauce over the mangoes in the skillet and stir to combine. Let it simmer for 2-3 minutes.
- Return the cooked chicken to the skillet, spooning the mango sauce over the chicken. Let it simmer for an additional 2-3 minutes to allow the flavors to meld together.
- Garnish with sliced green onions and serve the mango chicken over cooked rice, if desired.
- Enjoy your delicious mango chicken!
Mango chicken is a delightful fusion of sweet and savory flavors, originating from the Indian subcontinent. This dish gained popularity in the 1970s as Indian cuisine started to make its mark on the global culinary scene. The succulent chicken is cooked in a luscious mango-infused sauce, often featuring a blend of aromatic spices such as cumin, coriander, and turmeric. Chefs in regions like Punjab, India, and Pakistan have perfected this dish, infusing it with their own unique culinary traditions. Today, the best versions of mango chicken can be savored in top Indian restaurants around the world. The key to a perfect mango chicken lies in achieving the right balance of tangy mango and tender chicken, creating a dish that is both comforting and exotic. For a twist, some chefs incorporate coconut milk or cream to add richness to the sauce, elevating the dish to new heights of indulgence. Whether enjoyed with fragrant basmati rice or warm naan bread, mango chicken is a tantalizing culinary experience that continues to captivate food enthusiasts globally.
