Ingredients

- 6 quarts water
- 1 cup salt
- 6 lemons, halved
- 4 onions, quartered
- 2 heads of garlic, halved crosswise
- 2 lbs small red potatoes
- 6 ears of corn, shucked and halved
- 1/2 cup Cajun seasoning
- 1 cup unsalted butter
- 1/4 cup minced garlic
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- 1 teaspoon cayenne pepper
Instructions
- In a large stockpot, bring the water and salt to a boil.
- Squeeze the juice from the lemons into the boiling water, then add the lemon halves, onions, and garlic. Let it boil for 10 minutes to infuse the water with flavor.
- Add the potatoes and cook for 10 minutes. Then add the corn and cook for an additional 5 minutes.
