Instructions

  • Preheat the broiler on high and position the top rack 6 inches from the heat source.
  • Using kitchen shears, cut the top of the lobster shell down to the tail, then use a knife to cut through the meat to butterfly the lobster tails.
  • Place the lobster tails on a baking sheet, shell side down.
  • In a small bowl, mix together 1/2 cup melted butter, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Brush the lobster tails with the seasoned butter mixture, reserving some for basting.
  • Broil the lobster tails for 8-10 minutes, or until the meat is opaque and slightly browned, basting with the remaining butter mixture halfway through cooking.
  • Garnish with chopped parsley and serve immediately.
