Instructions

  • In a large bowl, mix together 1 pound of cooked and chopped lobster meat, 1/2 cup ricotta cheese, 1/4 cup grated Parmesan cheese, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  • Place a small spoonful of the lobster mixture onto a wonton wrapper. Moisten the edges with water and place another wonton wrapper on top. Press the edges to seal. Repeat with the remaining mixture and wrappers.
  • Bring a large pot of salted water to a boil. Cook the ravioli in boiling water for 4 to 5 minutes, or until they float to the top. Remove with a slotted spoon and drain well.
  • In a large skillet, melt 1/2 cup of unsalted butter over medium heat. Add 4 cloves of minced garlic and cook until fragrant, about 1 minute. Stir in 1/4 cup of chopped fresh parsley.
  • Add the cooked ravioli to the skillet and gently toss to coat with the garlic butter sauce.
  • Serve the lobster ravioli on plates, drizzle with any remaining garlic butter sauce from the skillet, and sprinkle with 1/4 cup of grated Parmesan cheese for garnish.
