  • 1 cup of shredded Monterey Jack cheese
  • 1/2 cup of diced tomatoes
  • 1/4 cup of sliced black olives
  • 1/4 cup of sliced jalapenos
  • 1/4 cup of sour cream
  • 1/4 cup of chopped fresh cilantro
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste

  • Stir in 1 can of chili beans, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, and salt and pepper to taste. Simmer for 5 minutes, stirring occasionally.
  • Spread 1 bag of tortilla chips on a large baking sheet in an even layer.
  • Spoon the chili mixture over the tortilla chips, then sprinkle 1 cup of shredded cheddar cheese and 1 cup of shredded Monterey Jack cheese over the top.
  • Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle 1/2 cup of diced tomatoes, 1/4 cup of sliced black olives, and 1/4 cup of sliced jalapenos over the top.
  • Drizzle 1/4 cup of sour cream over the nachos and sprinkle with 1/4 cup of chopped fresh cilantro.
